Blueberry Muffins

1/4 cup butter soft (1/4 cup applesauce)
1/2 cup sugar
1 egg beaten (1 tbsp flax meal and 2 tbsp water)
1/2 cup milk

Cream butter and sugar together, then add egg and milk. (Mix flax meal and water in separate bowl to thicken before adding to the wet ingredients)

2 cups flour (I use Einkorn, Red Fife, or Spelt whole wheat flour)
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. allspice

Mix the dry ingredients together, then mix the wet and dry ingredients together.

1 to 1 1/2 cups blueberries
1/2 cup chopped walnuts or pecans (optional)

Mix in the blueberries.
Bake at 375F for 20 to 25 minutes.

For a change you can substitute raspberries for the blueberries and or add 1/2 cup mini chocolate chips.
