Lemon Poppy Seed Muffins

1/2 cup butter or coconut oil (1/2 cup applesauce)
1/2 cup sugar
2 eggs beaten(2 tbsp of flax meal and 4 tbsp water)
rind of 1 lemon
1/2 cup milk (I add some of the juice of the lemon to the 1/2 cup milk)

Mix butter and sugar well, then add eggs and beat until light and fluffy. Add the lemon and milk. (Mix flax meal and water in a separate bowl and let thicken)

1 1/2 cups flour (I use Einkorn, Red Fife or Spelt whole wheat flour)
1 tsp. baking powder
Pinch of salt
2 tbsp. poppy seeds

Mix dry ingredients together, then mix the wet and dry ingredients together. Bake at 350F for 35 minutes. (Using the applesauce, flax meal and whole grain flour will make these a heartier muffin)
