Banana Muffins

3 large bananas
3/4 cup white sugar (1/4 cup sugar)
1 egg (1 tbsp of flax meal and 2 tbsp water)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all-purpose flour (1 cup Anita’s Einkorn flour and 1/2 cup whole wheat Spelt flour)
1/3 cup melted butter (1/2 cup applesauce)

I also add 1 tsp cinnamon and 1/2 tsp nutmeg to the dry ingredients and 1/2 cup mini dark chocolate chips and 3/4 cup chopped up walnuts or pecans.

Mash the bananas and then add the sugar. Mix the flax meal and water together in a separate bowl and let sit to thicken a bit. Then add the flax meal and applesauce to the bananas and sugar and mix. In a separate bowl add the dry ingredients and mix well. Add the wet ingredients to the dry ingredients and mix. Then fold in the nuts and chocolate chips. Fill muffin tray and bake at 375F for approximately 20 minutes. Makes 12 muffins.
