Broccoli Soup

6 cups of vegetable or chicken broth
1 bunch of broccoli, washed and coarsely chopped
1 large potato, peeled and coarsely chopped
1 stalk of celery, coarsely chopped
1 medium onion, chopped
1 or 2 Bay leaves
salt and pepper to taste

Add all ingredients to a large pot and cook until the vegetables are soft. Turn off stove and let the pot sit to cool down. Remove Bay leaves and then blend soup in a blender and return to pot. If you like you can add some sour cream or if vegan coconut milk to make it creamier. Warm and serve. Makes about 6 cups.
