Bean Salad

1 398mL can cut green beans, rinsed
1 398mL can cut wax beans, rinsed
1 398mL can lima beans, rinsed
1 398mL can Kidney beans, rinsed
(Other than the green and wax beans you can used different beans, such as, Chickpeas or Aduki beans)
2 stalk celery, cut into thin slices
I medium sweet or red onion, cut into thin slices
1 medium green pepper (or other coloured pepper), cut into thin slices

Mix all the ingredients together.

Dressing:
1/3 cup olive oil (or whichever oil you like to use)
1/4 cup vinegar (can use white, wine, or apple cider)
1 to 2 tbsp. sugar (or to taste)
salt and pepper to taste

Mix the dressing and then pour over the salad and mix well. It is best to let it sit for a few hours to overnight in the fridge. Stirring occasionally. This recipe is from my kids’ Grandma Amy.
