Pasta Salad

Vary the quantities of ingredients for this salad for size and play around with what veggies you like. Tomatoes would probably not work because of their moistness.

Cook our favourite paste, I like spiral noodles. Drain, rinse and set aside in a bowl to cool. I add a little margarine to keep the pasta from sticking. The amount of noodles will depend on how big of a salad you want.

1 pepper – mixing red, yellow, and orange peppers add colour to the salad
3 carrots – depending on size, sliced thinly
1/2 to 1 head broccoli florets – chopped into small pieces
1 small onion – sweet, red, or white – sliced thinly (or approximately 4 scallions sliced)
1/2 head cauliflower – chopped into small pieces
3 to 4 radishes – chopped into small pieces
1 to 2 cooked chicken breasts – chopped into small pieces (you can use turkey, ham, crispy tofu instead)

Mix the veggies and protein with the pasta and then mix in mayonnaise of your choice. Adjust the quantities to make as much or as little as you want. You can leave out or add different veggies. Salt and pepper to taste. An easy salad to make and play around with. It also is a meal on its own.
